I expect the ratio of greenhouse gases attributed to vinification is mostly the carbon dioxide produced by the fermentation process -- one of the reasons that many wineries are simply planting more trees on their properties (space allowing) to absorb some of the CO2, produce more oxygen and at least partially neutralize their carbon footprints.

Eskenazi&#039;s marginalization of biodynamics is a real shame. Ssome of the practices may indeed sound esoteric, new agey, etc., but as you point out, wineries practicing biodynamie for the right reasons are doing so simply to improve the health of their land and their vines and, in direct correlation, their wines.

Given the commercial importance of appearing green in today&#039;s marketplace, it&#039;s only inevitable that some wineries, in Europe as in North America, will adopt organic or even biodynamic practices while putting marketing benefits ahead of viticultural improvements.
